100 year old holster in dry condition. i ordered the antique dressing for the grain side. should i treat the split side with something?

This comes down to personal preference. If you choose to only treat the grain side, the dressing will eventually soak all the way into the leather. Otherwise, you can treat both sides with the dressing, it may slightly matt down the nap of the split side. Either way, you will not need any additional products to treat the split side.

I have a wwii b-17 leather helmet that needs reconditioning. will this be safe for it?

Yes, the product best suited for this application is our Pecard Antique Leather Dressing, use of the dressing will preserve, condition, and protect the leather for years to come. Apply the dressing in light coats using your fingers or a clean, soft lint free cloth, allow 12 to 24 hours for the leather to absorb the dressing, if all has been absorbed apply another treatment in the same manner. Usually, two treatments will restore lubricity back into the leather, allowing the leather to remain soft and supple while enhancing the patina or look of the leather. Remove any excess dressing with a clean dry soft lint free cloth and gently buff the surface to a soft sheen. Follow up treatments should be applied once or twice a year or as needed depending on usage, wear, and ambient weather conditions. Application of the dressing may darken the leather a shade or two. This is normal when restoring oils back into the leather that have evaporated or dissipated over time.

I have an old oily leather outback hat that is stiff and dry. Will the dressing work on "once" oily leather?

I've had great success "resurrecting" dry, stiff leather particularly vintage military slings. With proper application I have seen slings that I could stand up in a corner return to their formly soft and supple form.

Is the container supposed to be sealed? I received my 32oz damaged, lid off and no seal.

There isn't a seal under the lid. As long as the product is still in the container it is still good to use but if the container is broken, please return it to Amazon for a replacement.
