I appreciate Italian cooks using in-season ingredients and keeping recipes simple. While not all recipes here can be described that way, many can.

My new favorite cookbook
Every recipe I have made from this book has been wonderful. I love being able to revisit the regions of Italia that I love the most through the dishes that people love at restaurants all over Italy. Love the concept, love the food!

An encyclopedia of Italian cuisine
This is a phenomenal work, collecting together the culinary wisdom and traditions of an entire country's small, family-style eateries. That on its own is an accomplishment. The literal thousand (!!!) recipes in it span every course and just about every ingredient you can imagine, and then some. The recipes are organized by course - antipasti, primi, secondi, and dolci. Within each major section, the recipes are grouped together with similar recipes (soups, pasta dishes, same proteins, etc). There are also two indexes - one sorting the recipes by region, and another sorting them by ingredient. These indexes are pretty vital to navigating the book, since the Table of Contents is pretty bare bones.The strength of the book is its sheer scope and diversity. You could spend three years cooking through this and not get bored...there is so much good food to be had here! It's a treasury, really, of the best that Italian cuisine has to offer. While some recipes could stand a bit more detail, and the lack of any photos or illustrations doesn't provide any helpful visual cues to make sure you're doing things right, overall, this is an excellent work. I especially appreciate that every recipe has its own introductory paragraph, giving some helpful background and information on ingredients and technique for preparation.What I do wish for, though, is a little more structure and user-friendly indexing. The regional and general indices are great, but with 1,000 recipes, I would have liked a little more detail in the Table of Contents to find categories of recipes. An index arranging recipes by season would be a wonderful addition, too. Some sample menus would be wonderful, as well. That all said, I still heartily recommend this to anyone interested in Italian food and expanding their culinary horizons.

There are a huge number of recipies from all of the regions of Italy. It is almost an encyclopeida of Italian food.

Authentic and easy to follow
This book has recipes that are really Italian and are clearly written and easy to follow.I have spent a fair amount of time in Italy, largely Tuscany, love Italian food and have been very pleased with this book.
