Yes the StripMeister E250 can strip up to 250 MCM or .79" OD with insulation on.

Will the StripMeister machines strip aluminum wire?

There is no reason why it would not , the blade will cut through the PVC cover the same as it would in copper wire . Note of caution , this machine is for light duty , i returned mine after i received it , it would not have lasted for what i do .

Is this model water resistant?

No it is not as it is not water tight

Is this unit self adjusting for the gauge of wire?

No, this is not self adjusting. In fact, the one I got is the biggest pain in the butt to use as so many gauges of wire tend to roll sideways and leave the cutter wheel. 12 & 10 awg seem to be the only ones which strip fluidly. For what I paid, I am way more than disappointed.
