Customs WILL cut open the bag!
Twice now I have ordered these Tarbais Beans and the product arrived with a corner of bag snipped open and beans spilling out all over the interior of the mailing package. NOT HAPPY ABOUT IT! I assume it is customs, but what the heck! I am not downgrading the star rating because it is not the growers fault, but be forewarned. They cut the bag.With that out of the way, the beans themselves are exceptional. I have made cassoulet three times, once with pinto beans, and twice with the Tarbais. There is no substitute. The Tarbais delivers the best flavor and texture. These white beans absorb the flavor of the other ingredients, hold their shape during the long cooking time, and deliver a creamy texture that I have yet to experience with any other bean.

Harcourt beans in a duck leg cassoulet
I made cassoulet with the beans using slowly cooked duck and sauteed boar, duck, and venison sausages in duck/veal demi-glace—one of the finest-tasting dishes I have ever prepared. The beans were crunch on the outside and full of extraordinary flavor after hours of cooking at a very low temp.I will buy it again.BP

Creamy and delicious
Used these beans for a Christmas day cassoulet, and they couldn't have been more delicious. They were fresh, flavorful, and creamy, and made for a really delicious dinner. Thank you, Coopérative Pyrénéenne!

Great Beans - Highly Recommend!
So had to wait a while to get these authentic tarbais beans from France - WORTH THE WAIT! I occasionally like to make cassoulet and when I do I like to make it with authentic ingredients and tarbais beans (as opposed to canned great northern) is the only choice here. They are very hard to find locally not matter where you live although I guess in NYC or large cities there may be more options. Not disappointed, did the while bag and used about 1/3 of them for my cassoulet and froze the rest. They freeze great and then used them to complete a nice 3 bean chili. Highly recommend.

These are amazing authentic Tarbes beans
A tremendous and exquisite bean from the Basque region of southern France. Large, white, individually hand-harvested, amazing. The only authentic Tarbes beans are those with the official red seal on the package, such as these. Five stars all the way.

Likely the only cassoulet beans option available in the US right now..
There are limited choices when looking for proper beans for authentic cassoulet. These are the only ones one can consistently find in the US or shipped to the US, and that is at a hefty price. However, they deliver when cooking and do possess all the right attributes in terms of taste, consistency, size, etc. I have experimented with a number of French alternatives, such as Langarais, Castelnaudari and beans purchased in Toulouse, at the market. Results are very similar..
