Hook and loop it is! The best velcro tape on the market. if you don't want the tape to hold too well (ex. If you are frequently pulling something off and on.) you might consider not getting the industrial version.

I have an upright freezer and the seal seems to be weakening through the years. Could this be used to keep the door secured easily?

If it is many years old, it may use so more power to run than the new high efficiency units that you could pay for a new one with the savings. If that door seal stays leaky, it's almost certainly true.
