Will this product work well on acetate?

With a bit of sharpening they will work just fine on acetate. Just be sure to use a good cutting mat under the material being cut.

How do you sharpen these please?

In the past I have used a bench grinder with a fine stone. Take it easy and keep them cool. Keep the same angle on the original cut. It is not a space shuttle part though so you have not got to be perfect. Had no need to sharpen my set yet but have sharpened similar sets in past. I guess you could use a band sander if needs be.
