Q: Can you use gravity fed water instead of pump for off-grid tent camping?

Yes but the slower the water flow the hotter it gets! I recommend some sort of pump even a 12v pump will work.

Q: If this will be used outside during summer and fall...how much does it need to be covered to he protected from the rain?

I cover mine when it rains. The rain can go down through the exhaust vent. I believe the vendor I bought it from recommends that as well.

Q: Can a splitter be use to route water to a sink in addition to the shower head? And can the shower head/hose be replaced with a different one?

I bought this heater for my very old camper. the regular heater had died. A replacement was expensive. I replaced the provided output showerhead with a stainless steel hose from lowes. I think the threads are the same as a washer hose and ran the hose into the hot water system of the camper. this effectively split the hot water output to the regular shower, the kitchen sink, and the bathroom sink. Worked like a champ. I was not brave enough to feed the gas from the camper gas supply. I used a stand-alone propane tank. I also hung the heater on the back of the camper. not real elegant but it worked and my wife was happy.

Q: Can i put a vertical extension on exhaust vent?

It is possible with the right tools and the correct size and shape of pipe.
