The Hackleback or Shovelnose sturgeon produces a glossy bead that is reminiscent of Sevruga caviar.

Not a Connoisseur of Caviar But.....
....for the price and service, it's worth it. And since the shipping is the same $$$ for all sizes, I'm getting the larger size next time! We go through the 4 ounce size too fast. Not overly salted, great as appy on blinI with creme fraiche with either ice cold vodka or champagne. You do not need to spend thousands of dollars to treat yourselves now and then. But do buy a couple of those tiny mother of pearl caviar spoons. They look good and keep the taste of the caviar pure. Get them here on Amazon; they aren't expensive.

Very pleased. A bit on a too sulty side
After many loyal years of enjoying only Nepal caviar produced in Russia we've decided to give American made a chance. Very pleased. A bit too sulty. Perfect grains, sutusfying nutty aftertaste. We were serving it on top of Island Creek oysters and a very dry Champagne. A turned out to be a sensational NewYear dinner. Thank you Marky's for.. in my 20 some years of superb gourmet products.

Good value
The caviar eggs are a little mushy. You certainly don't get to feel the sensation of each one bursting in your mouth. Nice salty flavor. Overall, absolutely fine for the money.

Good caviar - affordable enough to feast
This is from a domestic riverine sturgeon and has the characteristics of classic caviars. It is a smallish roe entrained in a pleasant, creamy gel. Not too salty with a delicate flavor. It is fairly priced. The fun here is being able to sit down (with another person one hopes) and enjoy generous servings.

The worst!
First of all, I already wrote a review on this and it has never appeared here. I've not had that happen with Amazon before. This is the worst caviar I have ever had! I've had caviar in first class on several major airlines and theirs was excellent. If this had been served in a restaurant it would have been sent back immediately. I am now out a large sum of money after relying on reviews from customers who were luckier or have different tastes than me. The caviar was mushy, no pop, and tasted like dirt. I sent feedback to the company (Marky's) and haven't even had the courtesy to answer me. I will never buy anything from them again as I can't be sure of the quality.

really salty.. ouch
not worth the 150 some odd dollars.. not at all.. I've had lumpfish roe that had more succulence. This, not so much.

A clean and fresh Caviar taste.
This is a really good Sturgeon Caviar deal. I have only had good products and result from Markys products. Price points are excellent.
