Q: How long does it stay cool?

There is no insulation in this water jug. So not going to insulate at all.

Q: Is this hard plastic? Or is it like the collapsing plastic gallons, like flexible and thin plastic?

Hard plastic. FYI, I also emailed Coleman to verify this could be used for mid-term (up to 6 months) emergency water storage. They assured me it could.

Q: Is this a durable plastic or a flimsy plastic? Looking to put in the back of a pickup bed for thousands of miles on gravel roads.

It's pretty durable. Mine rides in the bed of my truck down miles of unpaved right of ways and many more on 4 wheelers. I do have to replace the spigot every once in a while.

Q: Could I stack these, several, on top of one another for long-term water storage?

They are not design for stacking. When full the sides bend out so they don't lend themselves well for stacking.
