Most of us know what they are trying to tell, nothing special about their receipe and is not very detailed.

Biryani a delicacy from the Mughal ruler of Hindustan which have come to epitomise the zenith of today's Indian cuisine
It is a collection of recipes, writer just collected from different sources, I hardly believe if writer gone through to test the accuracy of these recipes because there's zero picture added, I also have reservations on cooking sequence, methods, and procedures, Unfortunately writer unnecessarily compiling recipes from all around Indian provinces and small villages with hard to pronounce some what funny names.The word “biryani” comes from the Persian word “Birian” which means “fried before cooking.” One could conclude that the biryani originated in Iran, Another interesting story traces the origins of the dish to Mumtaz Mahal(1593-1631), Shah Jahan's queen who inspired the Taj Mahal. Since Mughals ruled Hindustan over 800 years where they left not only amazing architectural monuments but the art of making deliciously complex blend of flavors, spices, and aromas which have come to epitomise the zenith of today's Indian cuisine.Do not underestimate the verities and taste of Birianis from Pakistan, unfortunately only one "Lamb Biriyani" is discussed which is totally intentional negligence in my opinion.This book could be unique in its style if writer justify adding practical, most famous, tested, accurate recipes with end result clear picture in regular book format (its 5x7 inch dictionary style publication)With Biryanis it also offer good recipes of Pilafs and few accompaniments.Generally its a good book for reference and for those have experience in catering and understanding of proper procedure to prepare this delicacy.
