Knox gelatin is a great product and a great value. I do not use it for cooking or making any specific foods, so I can not comment on it from a culinary point of view. I use gelatin as a health supplement because it helps keep bones and joints healthy. It also helps grow hair and soften skin.Collagen supplements have increased in popularity in the last few years, and for good reason. Studies show they work, not to mention all the positive anecdotal feedback from users.Gelatin is collagen that has been partially cooked, so in a way, you can consider gelatin to be "partially hydrolyzed" collagen. The products that specifically call themselves hydrolyzed collagen or collagen peptides supposedly go through even more processing so that they are easier to digest. The jury is still out on if they are actually better than plain on gelatin. Gelatin is a lot cheaper, obviously.The main reason gelatin and collagen products work is because the main protein or amino acid in them is glycine. Glycine is mostly found in tendons and joints of animals, parts many of us no longer eat or do not eat enough of.I could go on and on about gelatin and collagen, but I will not bore you readers. They both work. I find gelatin works just as well for me as more expensive collagen products.I consume a tablespoon of Knox gelatin 2 times a day. I mix it with 12oz of water and 2 teaspoons of instant coffee. It mixes fairly well in boiling water. It will not mix well with cold. Hydrolyzed collagen products excel at mixing in cold fluids. Please remember that.All in all, Knox gelatin is great and I will continue to drink it everyday to keep my bones, joints and skin healthy.

I'm sure the product itself is just fine, what's left of it anyway.Rant; Who puts a thin cardboard box with little paper powder packets in it inside a paper bag and then ship it out and expect it to make it without being torn apart and smashed? ....I had to vacuum my carpet, clean out my lungs, nose and eyes and hope this stuff all over my clothes doesn't clog up my washer. Not happy at all about how it showed up. Four, 4 of the little bags that were in the 'smashed' box were ripped open and leaked the gelatin powder all over inside the shipping bag, so when I pulled the top of the shipping bag off it made a 'Big' mess every where.
