Q: Is the unit supposed to come with a gasket installed in the CO2 fitting as well as the small gasket in the plastic bag?

Thanks for asking, the gasket is NOT installed while it arrived, just in case the shipment would make it loose, so we put it in the plastic bag which is NOT required to use. If you wanted to installed it to make the CO2 charger (which is not included) tighten, you may feel free to put it in the coupler before install the CO2 charger. Q: Could you use this for wine using a nitrogen cartridge? nitrogen would allow the drink to remain flat and not carbonated.

Thanks for asking, wine is okay for this keg, but please kindly understand the Nitrogen cartridges are NONE threaded, while Razorri's original CO2 regulator is 3/8'' thread. So if you want to make nitro cold brew with this keg, that would require another coupler (or the tap system for easily understand) working for N2 cartridges. Btw, we are working on testing the certain N2 coupler for this keg, but it might take more times for all the confirmation before we launched it. Q: Where does the spare red gasket go that is included in the box?

I did not use it. My growler sealed without it so I just kept it as a spare. I so no instructions as to where it goes.
