Very good feel in hands
Bought two, at à great price, very sharp, and felt good in my hand. Was not disappointed. fast delivery, and just a well made blade and handle.

Can’t beat it for the price!
Such a wonderful knife! Feels great in the hand and is extremely ergonomic! Knife comes incredibly sharp and holds an excellent edge! So glad I bought two!

Pretty good
This is a nice sharp knife. I like the construction, but the handle is not great. It is super dry and almost splintery. I put oil on it, but I think it would benefit from a quick round with sandpaper. Otherwise it is fine. It cuts meat like butter and I would buy it again.

Excellent Knife - SHARP!
Apologies. I don’t have time to do a full review. So I will be concise.Amazon recommended this as a less expensive alternative to another knife that I was looking at.It had hundreds of positive reviews - so I bought it -on sale at around $79.It came in a nice box- wrapped nicely - with 2 small covers.Surprisingly- and to my shock! - I cut myself on the first use! It is like a razor- it took a solid second for the blood to appear.Once bitten - twice shy. But I bandaged up and continued testing it.Worth every bloody cent! (Pun intended).It slices through meat EFFORTLESSLY- actually with pleasure. My previous knives did okay crusting stewing beef - this one does it like butter.Veggies are a wiz.Frozen ribs was a test- my wife had reservations - and semi- thawed the ribs- and had no issue.I have done frozen meat with a small degree of difficulty- but if I pushed harder - I believe the knife is up to the task. But I didn’t want to - and slightly thawed is best I believe.The knife is an emerald green and the blade has a nice “patina” to it.It’s grip is “standard” and acceptable- no issues- but higher end knifes - these days- are being engineered with modern ergonomic grips.Otherwise it feels comfortable.I rate this as one of my best knives - the steel is high grade and as stated a composition of strong iron and steel fired.This is a great knife and good value.

Good design,
I tried out this knife in my search for a thin and lightweight Chinese-style slicing cleaver. This cleaver was thin and light, with good geometry and a good handle design. Unfortunately, the materials and craftsmanship were quite poor. The steel was soft, and the edges of the blade were rough. The handle was poorly finished and didn't match up cleanly with the tang. The rivets weren't flush on the handle either.Based on my experience with this knife, I would say look at Shi Ba Zi Zuo instead of Kitory.

Light and nimble
I have a bigger, heavier, sturdier cai dao, but its size and weight make it less agile. I bought this cheap one to have a lighter, more agile alternative, and it delivered.Let's not kid ourselves, it's a $14 knife, and it shows. The handle is visibly cheap, but while it feels flimsy, it's firmly attached to the tang. There's not hint of wobble. The mystery steel is barely polished and has some very light discolorations, but it feels quite solid and it's adequately sharp out of the box. The blade is quite thin, which makes the knife lighter. It's also nicely balanced. It doesn't feel front-weighted or back-weighted.And that's where it shines. It's so light and balanced that it feels like you're using a taller nakiri, but with all the advantages of a cai dao. But because it's so light, you should use it only on non-frozen vegetables and boneless meats.If you need a very functional cai dao for light jobs and you're not looking to impress the audience with a spiffy luxurious knife, this is a great deal for the money.And by all that's holy and pure, don't scrape the blade sideways across the cutting board like they do in their video! That's how you dull or even damage an edge.

This is pretty much the only knife I use to prep our meals, other than a small paring knife for vegetables/potatoes. Very good quality. Love the looks of the nice wood handle- Says its Japanese, but made in China. Overall I love the quality and not to heavy. But steel quality is very good. Very sharp! Plan to buy a few more variations of their knives.
