Don’t use anything else.
This is the only flour I use anymore. I have a gluten intolerance, have tried every kind of Organic flour available in the grocery, and always go severe stomach cramps, bloating, gas...I would be miserable. I am part Italian, so I love pasta, but I was limited to pasta made with vegetable flours. This flour is made with “SOFT” wheat, and I didn’t know there was a difference. I tried this after reading an article about the differences between American, French, and Italian flour. I do NOT have the stomach problems with this flour, as I had with the hard wheat. They also DO NOT bleach, enrich, or anything else that the US thinks is needed.......it’s just wheat flour. I use it for pies, cakes, breads, pastas, or anything that calls for flour. Works great everytime.

No more adverse effects from genetically-modified US wheat!
After being gluten free for 5 years, I recently discovered that it actually isn't gluten that most people react to, it is U.S. wheat - wheat that has been genetically modified to be sprayed with Monsanto Roundup. So, after a lot of research, I found this flour and gave it a try. I can now make crepes and bread without adverse effects

I am gluten intolerant but I can eat this with NO issues! No pain, no rashes, nothing!! It's so nice to be able to make baked goods that aren't gluten free - the GF flours just don't work the same.

Fantastic!
My wife reacts to American gluten containing products but is very unlikely to have celiac disease. So after hearing about a gluten sensitive friend's trip to Italy where they could eat everything there and didn't react to gluten containing products, she did a little research and found that many people with gluten sensitivity are able to eat Italian 00 flour and some sourdough breads without having any ill effects. We bought the 2 pack of this flour and made pizza with it. Not only can she eat pizza made with real flour without getting sick, but the pizza turns out amazingly well! Nice thin crust with bubbles in it and so delicious. It's great that we can all enjoy pizza night again!

Good product....but......
I have bought this flour many times and I love it. Last order I received one of the bags looks like it was chewed open in a corner and there was flour all over the inside of the box. That’s when I found out it’s not returnable.....not going to order again.

Italian flour worked well but know what to expect.
I purchased this flower based on the Amazon reviews after not finding the Jovial Einkorn flour available for a few weeks. The flower was very soft and fine. It made a nice puffy loaf of bread. The characteristics resulted in a bread that did not hold together well after slicing it, probably lower gluten than current U.S. GMO type wheat. This characteristic is somewhat like the non-GMO Jovial Einkorn all purpose flower. If you expect this flour from Italy to behave like the regular U.S. grown and produced all purpose flour, be ready to make adjustments. I am not a baker or even a good baker, so take these comments "cum grano saltis".

It’s like my gluten and dairy allergy is gone
So my entire family has a gluten allergy and my mom and I share a lactose allergy. I had done research and had read that Europe flour was different due to the processing of the wheat. I have even had friends and family that have a gluten allergy say while in Europe could eat anything they wanted with no problems. I found this flour read the reviews and hope I too would have no issue with this wheat flour. I have been using it for 3 weeks and it is amazing. My energy is back,I haven’t had my usual gluten allergy reaction (blistering of the mouth, sever stomach pain and bloating) AND I am having diary without issue. This is literally a dream come true. Hopefully others will too have a successful experience like me when ordering this flour!

Wonderful four, terrible packaging.
We love this flour and have ordered it many times before. The quality and flavor of the flour is always great. We are willing to pay the extra cost because of its benefit. Normally the packaging is not an issue, but in this most recent order the packaging was busted open. This is very unfortunate as we try to use every bit of this flour because my wife cannot consume wheat from the United States. She can only consume wheat from European countries most likely from their production and purity methods. I really hope this was a one time mistake and not a repeat issue as I would not be able to refer anyone if it is.
