Does it actually throw projectiles?

Yes it does, take your time and build it nice and clean. It's for demonstration purposes only, makes a fun toy. Launches projectiles but you won't be breaking any windows.

Can this trebuchet be used to launch various fruits (tomatoes, avocados, apples, etc)?

I have different sizes of trebuchets but the desk top would be good for grapes. The other fruit mentioned would be to large for the desktop model.

No. But then why would you want to?

I see a lot of responses for overall distance, but can you adjust for shorter distances, to say launch a sm rubber ball at a co-worker over a cubicle?

There is a mathematical relationship between the weight of the projectile (small ball), the amount of weight in the basket, and the distance the projectile will travel. I didn't take that class. Sorry. But the Romans and Greeks did and it works out that way. I would recommend a controlled set of experiments before you take it to work to bombard the boss. Happy hunting.
