Unglaublich tolles Kochbuch!
Lange hat mich kein Kochbuch so begeistert wie dieses. Ganz tolle Fotos, eine liebevolle Aufmachung und wunderbare Rezepte.Das Buch ist in sieben Kapitel unterteilt:1. Fermentation, pickling and preserving2. Breakfasts and bites3. Broths and soups4. Bread, Pasta and dumplings5. Vegetables6. Meat and fish7. Cakes, desserts and pastriesEs wird u.a. erklärt wie man fermentiert, Roggensauerteig selbst ansetzt, Kwas herstellt und Melonen-Melasse kocht. Aber auch fürs alltägliche Kochen sind viele Rezepte dabei.Auf meiner Nachkochliste stehen Gerichte wie Mors, Beetroot kvas, Walnut tincture, Odesan zakuska, Lazy dumplings with green beans, poppy seeds and crispy shallots, Spelt dumplings with kraut and caramelized onions, Beetroot tops, Curd cake with caramelized apples und Flourless poppyseed cake.Alles in allem ein sehr authentisches Kochbuch, in dem es Spaß macht zu blättern und Gerichte nachzukochen.Etwas schade ist, dass die ukrainischen Namen nur im Fließtext in lateinischer Schrift zu finden sind. Das war bei "Mamushka" wesentlich schöner gelöst.Wer interessiert ist an einer authentischen ursprünglichen Küche und gern mal etwas völlig neues ausprobieren möchte, ist hier genau richtig.Meine absolute Empfehlung!

An intelligent and heartfelt exploration of a country through its food and people
I love Olia’s previous two books and so was absolutely thrilled to delve into this new one! To me it has all the best qualities of her previous work but also raises the bar even higher. So much in-depth research went into this book, so much love and warmth for the people and their stories and so much beauty and deliciousness in the recipes. Olia covers a huge range regionally and gastronomically and the book has the most appealing range of recipes, all diverse in flavour and complexity. I real gem of encyclopaedic scope that will have a timeless appeal! Can’t recommend it enough!

Have been a huge fan of Olia’s writing and recipes since discovering her first collection, “Mamushka”, several years ago.Her passion and writing make you want to hunt down potentially obscure ingredients and make them your own store cupboard staple. And I have done.This latest collection is a love letter to foods and family and, during these despondent COVID times we find ourselves in, has been a window in to sunshine and happy times with those we love.The British really are rubbish at outdoor cooking - the fear-inducing sentence of “Do you want to come round for a barbecue?” sends shivers down the spine and memories reawaken of warm lager, economy burgers and the heinous culinary crime of ‘pasta salad’ - however Olia’s writing here brings the familial joy of cooking for loved ones outdoors to life.As I look at the rain pouring in to the remnants of this years vegetable crop, I’m already planning how NEXT Summer’s outdoor cookery will be a completely different experience.These are just beautiful recipes and smile of warmth, love and happiness, to be shared with friends and, if we’re lucky, enjoyed outdoors.Cheer yourself up and buy it. And “Mamushka” and “Kaukasis” whilst you’re at it.
