These taste amazing. The medium hot are less hot than a chile de arbol. I made chili oil with these fried in sesame oil then after cooled seasoned with shaoxing, Sichuan peppercorn, honey & salt :)Am happy, will buy again :)

great for making your own hot sauce
I roasted these peppers in a pan for 10 minutes, added a little water, and cooked them for 10 minutes. This was the base for the Asian-inspired hot sauce I made for my colleagues. The sauce was awesome.
