Lovely, creamy consistency
I have tried many different cannellini beans, and these are the best I have found. They cook easily without any of the resistant hardness that you sometimes find with dried beans. Try a couple of sprigs of rosemary in the boiling water and add a teaspoon of baking soda - an old trick that guarantees softness.
