Fantastic Taste, Quality, and Fine Texture
I have tried few brands of Blue Corn Flour, and this is the one to buy if you are looking for a clean product with a fine flour texture that tastes great! Additionally this corn flour has been nixtamalized for enhanced nutrition.

Delicious and easy to use
DO NOT USE the recipe on the back if you are new to making tortillas. The proportions are so very wrong.

Fine even grind; versatile
This is the first time I've used blue corn flour, although I'm a long-term user of regular corn flour. The grind level is very fine, which makes it work well as a partial replacement for wheat flour for items such as biscuits, breads and pancakes. The corn flour adds a nice texture to make it more hearty without a gritty texture. It does change the texture but in a pleasant way, and also adds a bit more crunch to the crust (for breads). It also adds a nice amount of fiber in a way that I find preferable to using whole wheat. The bag has a resealable top (zip lock), and is a sturdy plastic. While I often decant flours from their pouches to a glass jar, this pouch is sturdy enough for storage. The bag I received in May 2021 has a best by date of April 2022. The flour is a product of Mexico. While the price is rather steep for just a pound of flour, the color and composition is unique, helping offset and justify the cost. Still, it's too expensive to be an everyday flour for me, but rather one that is used only for specific dishes and in combination with other flours. Price aside, zero complaint about the quality, grind level and performance of this flour.

Had a moldy spoiled taste
I was using this as a base for blue corn chocolate chip and cherry cookies. The blue corn had an overwhelming moldy taste and smell, and it was not simply the earthiness that I was expecting, but smelled and tasted spoiled. However, the grain was stored and processed, it wasn’t good!
