The Easy Vegetarian Kitchen: 50 Classic Recipes with Seasonal Variations for Hundreds of Fast, Delicious Plant-Based Meals

Great cookbook
Very good conceptual cookbook. With a core recipe followed by seasonal variations, it lends well to making your own substitutes if you don't like some of the suggested variations. It's a nice touch that Alderson includes recipes for all parts of the dish--instead of calling for prepared tortillas or ravioli, she has simple recipes to make your own. I've only made a few dishes from the book so far, but the ones I've made are all keepers.-----Came back later to say the more I've used this cookbook, the more I've been impressed. This may be the best cookbook I've ever bought. The basic burger recipe is really good---nice flavor and the patties hold together very well.

Great starter cookbook
I’m really enjoying this cookbook. I wanted to start incorporating more vegetables and less meat in my cooking but wasn’t sure where to start. This cookbook gives very basic recipes for all types of meals, and also a helpful guide on how to stock your pantry.

Great easy recipes
Lots of seasonal variation so you can use fresh seasonal veggies. Delicious, by the way. Very few I haven't liked- and those I knew I was taking a chance on because they weren't made with veggies I like that much.

All those 5-star reviewers must have been using the dead tree version of this book.
If I were reviewing this on only the merit of the recipes, I would have given it a solid 5. However the practically unusable formatting of the eBook brought it down to a 3. Do the publishers even look at the eBook version they're selling us?To the publishers, we eBook buyers are obviously the poor step-children segment of their buyers. They're happy to take our money, but we're not really getting the equal of the dead tree book, because they can't be bothered to reformat it for electronic use. This cookbook does at least have a clickable table of contents for basic heading, but not for individual recipes. (LOTS of them have not only no clickable table of contents, but no clickable index as well, or, one variation that is particularly annoying is when the unclickable index has recipes identified by the page number of the book, while what we have to work with on the eBook is something called "location".Now, one might say "use bookmarks to mark recipes you like". This works with some eBook cookbooks, but not this one. It fact, in this cookbook trying to use a bookmark as a help for getting back to the recipe later, is an exercise in futility. A lot of the pages have a season (spring,, winter, et cetera) at the top of the page, with the recipe name below it. Unfortunately when you bookmark one of those pages your bookmark reads "SEASON, location et cetera". It's only when the name of the recipe is the top thing on the page does your bookmark show it. I have so far bookmarked 15 recipes (as I said, she does have good recipes), but only 4 of them show the recipe name rather than that season bit. Since it would be next to impossible to actually use, I'll be returning this for a refund, despite the great recipes. I've been doing this lately as a protest of the shabby service the publishers are giving their eBook buyers. We do pay their salaries, you know.

I have always enjoyed the recipes on Erin' blog and was eager to get her cookbook. The stories she tells in addition to breath taking photography add to the delicious recipes. She outlines her favorite basic vegetarian recipes and then adds variations based on the seasons. While I am in a small town and don't have access to a farmer's market year round, this recipe book has inspired me to go to my local farmer's market as soon as it opens for the season!

This is one of my favorite cookbooks - I love how many options there are for each recipe, and how easy it is to substitute ingredients based on what is in season (or what is in your kitchen). And the meals are delicious!

Bought for my veggie friends when I entertain.
I am a meat eater, but most of my local friends and relatives (both of them) are vegetarians. When I have them over I have to create twice the amount of food and this book is for them. The veggies. Some of the recipes seem even good enough to eat!

Great book!
Even for those who are not formally vegetarian, but would like to add some variety to their meals, this is a great book. Each recipe starts with a basic recipe, which is followed up by 4 seasonal variations. I read through the book when I got it and marked the vast majority of the recipes to try.

Easy to follow plantbased inspiration
One of my favorites recipe book ever. Even though I’m not the best cook I have used it several times and every recipe has turned out delicious.
