Temperature setting ranges from 104-194°F with a time range from 10 minutes to 72 hours

Can you remove the dividers?

You do not need the rack to cook. Just make sure you have something that will keep the bag above the water circulator. I've used a small wire rack the is flat and sits higher than the circulator.

What's the inside made of? Is it stainless steel? Also, how many watts?

Stainless. Not sure of the watts, believe 1000, but it works as advertised, and I just made the best hamburger I have ever eaten with it. Disclaimer, you will need to sear both sides in a hot pan, or as I did with a chef's torch, but damn, so good, so juicy.
