Bigger than i had imagined UPDATED
UPDATE 3/3/19This is my primary meat knife. I have a couple I use as well but this is numero uno. It's just now gotten to the point that it needs to be sharpened and that means I cut more meat than a pickup truck could fill. That factory edge was great! It has stained, no rust, along the way but I haven't rubbed it on newspaper since I got it. No chipping, bending or snapping has occurred which is a miracle in itself since it's a carbon steel along with it it's length. ALWAYS DRY DRY DRY AND THINLY OIL AFTER CLEANING!Got my old hickory 7/14/15 today. It was free of rust, was forged and had the tarnished (from the quinch i beleive) look( as all old hickory does) but the sharpened edge was not as sharp as I usually get when I buy them. It has a steeper edge but since it will be used for butchering small to mid game, I would prefer it that way. The edge just needs a little balancing. However this was about a half inch broader than I had imagined which makes looking at it a bit like a 20" machete (total length)which is fine for its use since I could use the extra weight to cleave thru the bone cleaner. However, I would have paid more for this brand in the same condition. I'm a long life user of Ontario Old Hickory blades and wouldn't trade for a different brand for anything. I am extremely pleased with my order. And recommend this seller for storing a item that can easily rust with a little humidity and keep them from doing so. Nice job!

Welcome to your new go-to kitchen tool
I was watching a YouTube channel called the BBQ Pit Boys. I'm almost positive this is the knife they use in the videos. I got this for about $20 - they wanted $99!First off, this is a big knife. I'm talking a machete or short sword. You can clear jungle brush or arm hobbits with this blade. It also cuts turkey, chicken, ribs, etc with ease.The edge was a little rough when it showed up. I put it on a whet stone for a few minutes and sharpened it up - it is very sharp.I think my favorite thing about the knife is I'm not afraid to use it. I have expensive knives in my kitchen - I could buy 5 or 6 of these for the price of one of those knives. However, I'm always thinking about scratching the blade, dulling the edge, and hesitating to use it. The Hickory knife feels like a tool - and I mean that in a good way. If I scratch it, drop it, kick it (ouch), doesn't matter - it's the go to tool.Cautions about this knife:-It's not wife friendly. She was like - why did you get such a big knife? Duh! Why not?-Not sure where to store it. My kitchen isn't well equipped for a short sword. I have it in my garage on a shelf right now.-It's heavy. Your arm gets tired when you cut your steak at the table with it.-Needs a sheath. I'm looking for one - haven't found one yet.

Excellent All Around Knife
I ordered this knife because I watch the show Survivorman & thought to myself you never know when you might come across a situation where you need to survive & a knife would definitely come in handy. So I asked around & a lot of people were recommending the Old Hickory brand knives & so I purchased the 14in one. This Bad Boy measures up to about 19 1/2 inches overall. The blade itself is about 14 inches so that leaves 7 inches for the handle. It may be a tad bit heavy for those who aren't used to the bigger & better quality knives made with carbon steel but you should get used to it within a couple of uses. I've used this knife for cutting up meats, mixing up hot coals & chopping down branches. This knife is perfect for cutting up thick hardy cuts of meat, great for grilling outdoors & big enough to where it can be used as a machete if need be. The only bad thing about ordering this knife has nothing to do with the knife itself, it's that it doesn't come with a sheath. I'd recommend this Old Hickory branded knife to anybody in a heart beat. You won't be disappointed. May need a little sharpening.

Seems to be a great knife
This is a great butcher knife. It is very reminiscent of the old robeson shur edge knives. It is a large knife it was sharp out of the packaging. To my surprise it was also stamped made in USA. This knife will work well for whatever you need it for, cutting meat, slicing vegetables, cutting large fruits such as watermelon.

As I messaged when it arrived. The knife is a good quality knife but I thought I was getting a 7in one not 14in. The 14in one is far too big to be useful to me..The picture was of a smaller one than this one. I was told I could send it back, but the shipping to get it to USA is as much as the knife cost.I still want a 7in one.

Perfect steel, perfect thickness, crappy handle
I have a LOT of Old Hickories, ranging from paring, skinners, kitchen, butchers, etc. I have this big bad boy too. Excellent steel, love the medium/thin blade thickness. Durability of steel is also excellent; I have beaten these to death, neglected them, used them for 15 years in the field at work until they were ground down to nothing. The handle will not tolerate abuse, as the two rivets are small. Blade will instantly start to change colors, even from just touching it. That's part of the deal. Easy to sharpen, retains edge well. I recommend sanding on the handle to smooth the finish, then soaking in mineral oil to permeate the wood.This particular model has very large handle scales, you will probably need to round out the edges and is obviously very long. Great tool for preparing large cuts of meat, and could also double as a machete.Old Hickories are fun knives, quality control isn't bad (may want to purchase in a store to make sure the handle meets your expectations, they have some degree of variability), and I really enjoy using mine. Plus you can't beat the price for 1095 and made in USA!!!

Which is perfect for brisket or other large cuts of meat
This is a big knife. Which is perfect for brisket or other large cuts of meat. You can easily cut a chicken in 1/2 lengthwise with this knife. It takes and holds an edge incredibly well. Just remember it is not stainless steel. It takes on a beautiful patina over time. Make sure you clean, dry and oil with a vegetable oil after each use. Like cast-iron, it is well worth the effort.Did I mention this is a big knife?

Are you a butcher?
I am not. But I love knives and I needed this one in my collection. At 14 inches it's one of the biggest. Seriously the 1095 carbon steel used here is high quality stuff and could have been a lot harder if heat treated better. But let's be honest, this is no Yanagi or Suji. I could give it a crazy sharp edge, but it won't hold it and hasn't been made to be a slicer (although the 14in length makes it the perfect sizes to cut extra large pieces or spice crusted stuff for which you might, and should hesitate to use your Japanese extra hard slicers). The 10 inches one is by far more useful.Just be careful with the steel. I keep my carbon steel oiled as I'm not a patina guy. But in all of my carbon knives, the Old Hickory blades made with a very high carbon content alloy and 0 chromium are the ones that oxidize the quickest.Very much recommended as a specialized bbq knife, just make sure you have a big enough storage place or room on your wall/ magnetic rack.

Sehr scharf, und eine sehr tolles Altagsmesser, dass einem auch mal verzeiht wenn es runter fällt oder nicht so sanft behandelt wird. Ich liebe Messer für den Alltag als Werkzeug die Robust und langlebig sind, Messer für 250 € oder mehr mag ich nicht, da muss man zu sehr obacht geben. Dazu schaut es sehr cool aus und sollte von der größe her auch für den größten Braten reichen. Wer Messer liebt, kommt daran fast nicht vorbei.

Nice knife ,sharp! Wash and dry knife soon after use and apply some cooking oil or spray to blade to avoid rust.

Old Hickory
Wie beschrieben ist dieses Messer der Hingucker und auch im Gebrauch universell klasse.Allerdings muß der Schliff erst einmal nachgearbeitet werden, hier fehlt es noch an der entsprechenden Qualität.Erst auf einem sehr feinen Abzihstein den Grad vom Schleifen entfernen, dann mit einen großen Wetzstahl noch das Finish bearbeiten.Nun kann es auch zum Rasieren verwendet werden, die Standzeit des Schliffs ist materialbedingt sehr gut.Schade dass es keine Scheide dazu gibt, es ist für eine sichere Aufbewahrung unbedingt zu empfehlen sich etwas entsprechendes zu beschaffen. unser Old Hickory lagert in einer selbstgefertigten Holzscheide, Enkelsicher !Hier geht es nicht ums Messer selbst, sondern um Personenschutz.
