I liked the profile of this blade and there is little doubt it is superbly made and uses decent steel. It handles really well but if I were to make any criticism at all it would be that for a filleting blade it is quite stiff. I would have preferred a bit more flexibility in the blade to follow contours more readily rather than having to 'feel my way' as it cuts. I've owned this knife for months now and still can't make my mind up whether I like it more than a really cheap but thinner and flexible blade I also own. Pride of ownership of a premium product is one thing but it would be nice if 'premium product' extended to 'premium performance' also, and I'm not sure it does in this case. Looks nice on the knife rack though...

This is my first Dalstrong knife. Very sharp yet easy to use. Brisket trimming is so much easier. Unlike $30 Pitboss knife set Shogun does not need to be sharpened 6 times just to trim a brisket. Planning to expand my collection and have Dalstrong sharpen them...

Purchased this knife a few months ago and it has become my, go to knife, for most uses. It is extremely sharp and holds the edge very well. I really like the sheath it comes in as it protects the blade very well. The knife handle is just the right sized and comfortable to maneuver. Great kitchen knife.
