INTRODUCTION It is very rare to find an Extra Virgin Olive Oil with 0.1% acidity. Uruguay has emerged in the lasts 15 years as one of the top countries in the world when it comes to premium EVOO. The average mild temperatures similar to the ones in the Mediterranean basin, soft hills and long sunny days during the spring and summer make this land heaven for olive groves to thrive. At 500 ft. over the sea level, only 6 miles away from the Atlantic coast line, lies Quebrada de los Olivos (QO). The process of olive oil making starts in the field, with rigorous sanitary controls and optimal plant caring as well as selective harvesting techniques and the subsequent cold pressing process.
