Do you need to pre-soak these before cooking?

It cooks very easily.. 10-15 mins boiling, takes a little longer cooking In a sauce, with no pre-soaked seems to work perfectly.

What is the shelf life?

I don’t really go by “sell by” or “use by” dates. These are dried goods and I store them in a cool dry place out of sunlight in a plastic barrel to protect against mice. I have some that are over 5 years old and there is no deterioration in flavour.
