Bought these as a gift for a butcher to use in the meat market and they have told me several times how great these knives are. They keep their edge for a long time, the grip is good even when working around water and blood, and they're easy to clean. They're happy with them so I'd say they're recommended.

The initial quality of the knives seems quite good although the grind of the edge could have come more refined from the factory. This was easily remedied by touching it up with a honing steel, which is something that I normally do to maintain the edge of my blades. They were quite sharp and seem to be holding an edge after trimming and carving 7 briskets, 8 racks of beef ribs and 25 pounds of chicken. The rubber grips help maintain a good purchase on the knives which adds to the comfort and safety. The primary reason that I didn't give these 4 stars is because of the cheap carrying case. Each blade comes in a light plastic sleeve with a tiny plastic tip guard, both of which seem like they were intended to be disposable, except for the fact that fabric sleeve into which each knife is stored, would be quickly sliced without the use of the plastic sleeve. This doesn't bother me too much because the overall set is a great value for the price. Time will tell whether or not these knives hold up, but I feel confident based on my experience thus far.

In terms of the knives; haven't had a problem with them since ordering, but that's to be expected. These should last a while. The grip could be better, but its fine if you know what you're doing or are just getting this for at home stuff where it won't have time to build up fat and protein during use.In terms of the steel; its abrasive rather than polished which is fine for home use since you won't be putting it through enough punishment to need constant work and you can easily just rinse it when you do steel your knife, but for professional use I'd be concerned since it can slightly damage the blade and risk leaving bits of metal behind. It also 'sharpens' every time you use it which effectively reduces the lifespan of the blade.Personal preference for this is to use the knives and grab a polished steel for steeling.
