I like the accuracy with different probes. I check surface temperatures of equipment and also internal temperatures of hot cold food items. Temperatures are reached fairly quickly.The same instrument is used by my local county health department so that is my reason for purchase. I want the stores I am responsible to be measured accurately with the same equipment as the health inspector.
