Thyme Honey by Alemany - is harvested in the spring time from the Catalonia region of Spain. It has a delicately sweet flavor with clear, sour traces and a floral aroma. The thyme is mildly intense but very forward in the aftertaste and the color is that of molasses. Makes for a great addition to rolls and biscuits.
