Do these operate on 6v dc or 6v ac?

6V DC. All LEDs run on DC no matter how the electricity is first attached. Plug them into 120VAC, and that's converted to 6VDC at the plug transformer.

Is it possible for me to cut the string down in length and still have it work?

If you know how to solder then possibly yes, though you would have to purchase another transformer/plug, but if you were just to cut the string you would cut off the power to the lights beyond the cut.
