Do not use an air lock.
this here is a superior product. The back of the label warns against using an air lock and that is 100% god-damned right! My mash blew up in my bathroom. They are not joking with this 48 hour yeast. Fantastic product. I just would like to know what to use i instead of the airlock...

Works even better than I Expected
Well, Ha, haha..This blend does Exactly what it claims, that's for sure! I just ran a quick experiment with a quart of grape juice : 1 1/2 tsp. alcotec- also a quart of sweet black tea : 1 1/2 tsp. to see if it even works (low ratio because it's not sugar wash) and it certainly works. It didn't need 48 hours for this but just under 20 to fully convert all of the sugar into alcohol--about 9% abv for the tea and 8.5 for the grape juice, so it definately works quick! clearly the main nutrient is niacin because the blend itself as well as the results smell strongly of niacin. the grape juice actually tasted okay for a 20 hour ferment, it just smells like niacin. obviously, if you were planning to distill this anyway that wouldn't matter so much. All told tho i wouldn't recommend this for wine making or brewing beer but if your only intention is to produce ethanol quickly, this blend is ideal for that. if you do want to make tasty beverages quickly, that would still be possible but you will need to help it quite a bit---crash, rack, add fresh juice and chill might get you a decent wine but it would probably be easier to just use wine yeast and go set it and forget it style. A for effort tho.

Worked great
So, I followed the directions and I think it recommends too much sugar. It rested at a Specific Gravity of 1.28 which is extremely high so I added another gallon of water just in case the sugar was killing the yeast. I tested it 8 days later and its at exactly 21%, which is the max this yeast can tolerate. So, be careful with the amount of sugar they recommend but it worked great! Also grab some Super Kleer to clear the mash, it was very cloudy and I was able to get it clear with the finings liquid.

Longer than expected but WORTH IT!
I don't know what I can say about this 'yeast' that hasn't already been said other than i WISH stills were not 100% illegal in my state. Otherwise i'd buy me one of these DIY 2 Gal 10 Liters Home Distiller Moonshine Alcohol Still Stainless Boiler Copper Thumper Keg And go to town. EVEN without the still i got ALMOST liquor level ABV %'s. I made several batches using Apple Cider ( Raw and Un-Filtered ) plus varying amounts of sugar and found my 'sweet spot' was 5 cups of RAW sugar and 1 cup of Brown Sugar. It was so strong I ended up cutting it with a watermelon schnapps. I won't lie, it takes MUCH longer than the suggested time to get a drinkable product. UNLESS you don't mind a little yeasty taste. I Tried COLD shocking this stuff for 3 days ( 72 hours ) and as soon as it thawed the yeast was back to doing it's thing. IF you want a hard and fast drinkable product I'd suggest getting the ALCOTEC clearing agent. That just MIGHT help, but honestly this yeast is such a beast I dunno if that would do it.

nasty smell and strong chemical taste
Stuff works quick, really quick. But the finished product smells and tastes like a dry erase marker. If you are planning a still or some high end filter then this stuff may work for you. Will not produce a drinkable product on it's own.

Made wine with this and the results were amazing. Had good flavor and it did the job at producing alcohol.
