My husband is very concerned about copper toxicity when cooking acidic foods in unlined copper pans. Please clarify.

Unlined copper jam pans are perfectly safe for preparing jams IF . . .you always remember and never forget . . .mix fruits and sugar in a separate glass or ceramic bowl before placing in the copper pan. The high sugar content prevents toxins from developing.This also means certain pectins that require adding sugar later in the cooking process, can't be used. However, I've been successfully making my jams in one of these pans for over 25 years.

what are the dimensions of this pan and the thickness of it's walls?

The bottom of the pan is approx 11" across. The sides flare out so the top of the pan is just under 14"wide. As to the thickness of the walls, hard to estimate, perhaps 1/8"? May I say that this is a fantastic pan. Cut my jam cook time down vs. the All Clad pan I was using. I can put up to 10c of mashed berries in it at a time. The flared walls keep it from boiling over. Even heating and easy clean up. Highly recommended.

How heavy is the 15 qt. pan?

This is a very heavy pan. I use it at my restaurant and at home for making preserves. You will not be disappointed this pan is the real deal for reducing jams and jellies.
