Imagine this..
One unassuming day at work, your boss comes up and says "let's have a cook-off." And sets a date the Friday before super bowl for a wings cook off. Well, a few of us went a little crazy. Although I was massively outgunned by people with actual smokers cooking wings, I scoured the internet for the best possible spice combination and practice many different combinations until I finally came up with one that I thought was fantastic. Well that mix shall go to my grave, and I didn't win the contest, these are by far the best comments I have ever gotten on wings. I took this spice blend and two to one I mixed it with cayenne pepper. I baked them skin side up and a very specific temperature after they sat in the fridge overnight to try out the skin. Then I put on a sauce with a medium heat, then broiled them 3 minutes in the oven once again. Quite simply it was the best wings I've ever made. Tonight, I cooked chicken thighs with this spice blend and again I added the cayenne pepper. Fantastic. If you're looking for a single spice blend that works really well with chicken, this might very well be your best friend. By the way, I came in second for that chicken wing contest. The only person will beat me was somebody he used in offset smoker and flash deep fried 5 minutes before serving. I made mine the night before and reheated on site and I still came in second. This spice blend will be my secret weapon from now on
