What is the purpose of the sodium citrate?

Sodium citrate allows water and fat to mix (oil and water don't mix - HA!). this allows you to make things creamy without adding additional fats, such as cheese sauce using water instead of a béchamel sauce. You can also use sodium phosphate, but citrate is easier to find.

Are the products gluten free / celiac safe?

non gmo, vegan and also kosher certified, remember you will prepare the food, this items are only for the process of spherification, you add whatever you want to your recipe. that's what I did. make sure you watch the alkaline levels, this might change how fast the spherification happen.

I want to make Caesar dressing spheres. Will this kit allow me to do so?

Loren - the only reason why your spheres would turn into lumps and not be liquid-filled would be if the spheres are left for too long in the calcium solution, or not served immediately. The science of direct spherification is that the chemical reaction between sodium alginate and calcium chloride will continue even after the spheres are taken out of the bath. This is not an issue with ingredients.
