Toasted rice adds the nutty flavor to dishes like laab and other yum dishes. Heat up a pan or wok and add one or two tablespoons of uncooked rice. Lower the heat and keep stiring to prevent burning. Some rice will pop, like popcorn. When done, the rice should be golden brown. Remove the toasted rice from the pan and pour into a mortar. Instead of pounding with the pestle, I twist it to crush the rice into smaller pieces. The last time I pounded toasted rice, I found myself sweeping the whole kitchen because the little pieces flew everywhere. Some people like the toasted rice to be fine and powdery. I like the mixture of rough ground and powder to add texture to the dish.

Agree with the review which states that this product is inconsistent in grind and toastedness. I made the mistake of trying it anyway, and was disappointed before I even opened the bottle. Still, I went ahead and used it for larb salad.. and was even MORE disappointed. The dish lacked its signature nutty flavor. Worse, the larger pieces gave a gritty consistency-- some pieces actually had to be spit out! Gross. I can't return it, so I'm throwing it away. Waste of 7 dollars. :(

I threw this away immediately. I often use toasted rice powder when cooking and it has an amazing scent. I moved to TX and ordered it from Amazon because I couldn’t find it locally. However, when I opened this bottle it had a different smell. I let my mom, who is Thai, smell it and she said that’s what it smells like when it’s old.

Disappointing quality
Rice powder had an inconsistent grind and degree to which it was toasted. Mix ranging from whole, raw rice grains to burnt tasting bits and dust.
