My Search Is Over - For Now!
I bake all my own breads and buy numerous types of flours, and whole wheat berries (I have a grain mill) in bulk. I've been searching extensively trying find non-bleached and non-bromated flour. The Potassium Bromate is illegal to use in flour in Europe but, for some reason, we allow it here in the USA and the manufacturers use it to add elasticity to the flour.The Sir Gallahad flour is a perfect alternative. I just wish I could find it locally to avoid the shipping costs that are built into the price.

My second bag
I buy and use one bag a year and store it in food grade buckets. Expensive up front, but cheaper than buying every couple weeks, not to mention more convenient to know i have my supply and i don't suddenly run out. Beside that, my grandmother taught me everything i know about baking, with help from Joy of Cooking, and that is how Grammy bought hers.
