Does the lid close so its not always open?

Yes it does, you can open and close the lid when you want too. Fantastic for keeping beers and wine in the garden and if you put some ice inside it keeps everything cold all afternoon/evening.

This says it is a double wall cooler, but are the walls hollow or does it contain insulation of some type?

The walls are hollow just air gap for insulation but the box works well even in hot weather if you keep closing it. Takes a few bags of ice and some cold water to work well.

Can this hold 70cl and 1ltr bottles with the lid closed

It can hold 70cl ok not sure if 1l would fit about 10mm clearance on standard bottle. 1.5l definitely don't fit stood up but there is plenty of room otherwise, mini kegs do fit ok as well.
