Water flow restricted by silicone baffle
I fitted this as a replacement for my ancient Model 75 and it was a straight swap, although I had to cut off the securing bolts of the old one with an angle grinder to get it out. It was relatively easy to fit single-handed once I built up some support below to hold it in position while aligning it into the plughole. As most people have commented, it is VERY quiet compared to older models. This is largely due to the silicone baffle which sits in the opening. The older units had a fixed baffle which sat below the sink flange. The Evolution range's baffle is pushed in from above, similar to the plug. It's possible to accidentally push the baffle down into the disposer while shoving a whole chicken carcass down its throat! If you run it without the baffle, it's noisy and splashy. The new plug is improved over older models in that it is able to 'pop up' in position and can be used instead of the baffle to keep splashing down while still allowing water to flow into the grinding chamber. You can use the plug with or without the baffle in position. I am very impressed with the capability of the Evolution 200S. I would never have dreamed of putting fresh sweetcorn cores down the Model 75 but the 200S gobbles them up with ease. The table does say you can put almost anything down it, but I'm not sure I'd expect it to grind avocado stones. The only issue I have with this model is poor water flow. I actually rang up Insinkerator customer service for advice. They weren't much help, but I worked out that it's the silicone baffle which is causing the issue. The design of the baffle causes an air bubble to form beneath it which slows the flow. You can solve this by sticking a washing up brush down to disperse the bubble, but it does re-form as more air is drawn down with the flowing water. I'm considering using a hole punch to create some venting holes in the baffle where air is getting trapped. This might make it a little more noisy, but probably worth it to reduce the risk of the drain getting blocked due to poor water flow.

Easy drop-in replacement for previous model 75
The existing model 75 (10 y+ old) developed a problem that wasn't fixable. It provided 10y of great service with multiple users unfamiliar with what could be put down. I was happy to buy the same make, but concerned that after 10y, the manufacturer would have made "tweaks" meaning the plumbing wouldn't fit nor the top plate that sits in the sink. However, I was pleasantly surprised none of that was the case. I simply unscrewed the side drain pipe, unscrewed the air-pipe actuator, rotated the lock nut under the sink holding the main unit to the underside of the sink, and it came straight off. The new Evo 200 was an exact fit for the locknut, and the plumbing exhaust on the side. It took less than 10 minutes. Whilst I had the plumbing undone, I took the time to flush out the drain pipes, undo all of them where possible, soak them in drain fluid (I use plain caustic soda) etc to remove the built up food detritus and congealed fat. The pipe was almost blocked, so I'll attend to that more regularly in future. It worked, with a bit of tightening up the drain connectors. It is *much* quieter than the old model. Outstanding product.

After 3 years still extremely happy with this disposal!
This disposal has been an outstanding addition to the kitchen. Very quiet, efficient, and eats up everything we’ve thrown at it in the past three years. However it made a grinding noise, then stopped working. We were frustrated as Amazon couldn’t help, so we called the manufacturer who was very helpful, and kindly asked us to make sure power was off/unplugged; then asked us to dish around to see if anything had fallen in there. My wife said she pulled out a chewed up 20p coin! The manufacturer then asked her to press the reset button on the bottom of the unit, and it started working just like new. Who knew (or remembered) there was a reset button! So if you need a disposal to chew up 20p coins then this isn’t the right one for you! 😆 Otherwise it’s been an ideal purchase, and would highly recommend.

Not possible to get help from customer support
Installation was easy, all work well for one day. Then, the air switch stopped working and it is not possible to switch off the Food Waste Disposal unless unplugged from power. Since this happens after 2 day, I'm allowed to send it back to Amazon. However what I'm supposed to do meanwhile?? I cannot use the kitchen zinc when the Food Wast is out. I was trying to communicate Amazon to get a support of local rep here in Israel but so far could not get their response

Really quiet and works really well.
Bought this to replace the Insinkerator model 45 that decided to leak from its bottom after many years of service. Despite this one being larger and heavier, it was quick and easy to install, just needed to adjust the original plumbing a bit. Compared to the model 45, it is very quiet and grinds the food easily and it works much better on things like orange peel. The only slight criticism is that it's so quiet, it's hard to tell when the hopper is empty!

Great product. No longer have to have a stinky recycle bin underneath my sink. Only downside was installation. Due to the way I have my sink it was awkward attaching unit to the base which attached to the sink.
