Millet is great for Hirselaibchen- a favorite of ours from Austria
Millet is part of the Sorghum family and it took me sometime to find the right stuff. It’s a staple in German and Austria supermarkets but hard to find in the US. The recipe is simple and so delicious- hot or cold.Cook the millet in vegetable stock (about 200g millet in 0.5l) until all the stock is absorbed (15 min) and let it cool down with a closed lid).Add 2 eggs, lots of freshly chopped parsley and onion and season with pepper. You can add some finely grated carrots or some grated cheese iyl. Form small , flat dumplings, about 2“ diameter and 1/2“ thick. You may need to add some breadcrumbs if it’s too liquid and hard to keep shape. Pan fry in Gee or corn oil slowly until golden brown. Serve with sourcream (add some salt and freshly minced garlic). Can also be eaten cold.Fry slowly

A delicious grain better than quinoa!
If you cook it for an hour in chicken broth is delicious. Must add more broth so it doesn’t stick to the pot. It can be made into a soup!

THIS IS NOT FLOUR
I have been using the BRM Millet flour for years. The picture on the website shows flour. What it actually is is Hulled Millet that has to be ground.luckily I have a grinder, but only ordered this because I got Whole Millet the last time I ordered. I thought that I had made a mistake on that order so I went back and looked. The picture shows Flour. Please update the picture on the website to reflect ( HULLED MILLET ) Not Flour.

Great breakfast hot cereal!
Tried several brands but prefer Bob's Red Mill brand. Millet makes a great and delicious tasting hot cereal. Plus it is gluten-free.

pantry staple, nice option for any grain/seed dish.
Love millet, it isnt my go-to grain/seed as it doesnt have much fiber compared with other real grain options, but this is nice to circulate in my cooking. I enjoy all sorts of seeds and grains, and incorporate them whenever I can. I just use whatever grain (or seed) based on whim as so many are interchangeable. I often buy Bobs Red Mill products as the quality is always on point. I tend to buy more than what I need at any given time, but I am fine with that. All told I have never had anything go bad before "expiration date", nor long long long time after. Only stabilized rice bran (any brand) goes bad easily, but all else.. just store well and it will last a long time on shelf. This pack of 4 will last me a good long time. Yum yum
