I like a more flat curved fader rather than the upright pointy type. Are the fader nobs easy enough to pull off and change out?

Yes, I easily replaced mine with Mackie style fader knobs. The fader pot shaft is 4mm, so any knob that accepts a 4mm shaft will work.

Could this be used in any DAW, truly? Aside from the mentioned: Cubase, Logic, and Reason? are the controls, buttons, etc, easily assignable?

Yes you can. In a case where it is a DAW that we do not have deep integration the Panorama will work as a general midi controller.

Yes. You will have to be in internal mode to make this type of assignments. If you download your DAW specific files from nektar, many things will already be intuitively assigned.
