Can you convert the switch to 125v with some sort of device?

This should be more of a question of what are you doing? The switch is designed for automotive uses. Which are 12v systems. Some 24v but mostly 12v. So I would guess you are using it outside its designed function. To answer your question. Is it possible, Yes. But the first time you hit that switch on, it will in all probability fry and melt. I would NOT recommend trying to do it. I would find a different switch that is made to carry that kind of voltage.

Why does the light on the switch stay on constantly?

If the switch is in the ON position, the LED light remains on. If the switch is in the off position and the LED is still on, I would double check the wiring. Make sure they are on the correct terminal posts and properly connected and sealed. Or on a very off chance, you just got a bad switch.
