Soft steel. One of the first things I do when I get a knife is sharpen it. When sharpening, there was a noticeable amount of material on the whetstone. The edge sharpened nicely however.The handle is fine.The knife is heavy but that’s why I bought it. I’m not filleting fish.All-in-all, I didn’t pay much for a good knife to have in the kitchen

Very good cleaver. Have used it multiple times from splitting whole chicken, separating turkey legs/thighs fruits and veggies. Good value too.

EXACTLY what I was looking for. Cutting up whole chicken & turkey is so much easier.

Good knife, nice size very sharp and easy to handle. Cut through turkey bones like butter.

Heavy to hold. Didn't use the knife. Knife was returned to kohls in Matthews North Carolina.
