Q: Why is this priced at $354? the msrp is $269.

Got mine this past month (10/17) at Bed, B &B. $269, and then used their 20% off coupon and got $53. off that price for $216.+tax.

Q: How do the bake and roast functions differ - and how does the slow cook function differ from using bake or roast at a low temperature?

The Element IQ technology featured on all Breville Smart Ovens' makes alterations to time and temperature to achieve a variety of results based on repeated results in our own test kitchens. Bake is a gentle approach towards target temperature, while roast is a more aggressive approach. The Slow Cook function enables a longer time and automated keep warm at a specified temperature for up to 10 hours. The Bake function has a much wider, less specific range of temperatures and is limited to two hours total cooking time without an automated Keep Warm activation.

Q: Can you use aluminum foil in this oven?

The BOV845BSS Smart Oven Pro is very similar to a traditional home oven and therefore can be approached with similar expectations. Due to the quartz heating elements (two top, two bottom, with a shield though still partially exposed) and the size of the cavity, caution should be exercised when using foil to prevent direct contact with the top heating elements especially. Careful and thoughtful alignment of the foil, tightly wrapped to avoid any contact with the heating elements is certainly required and recommended.

Q: Can a roasting temp probe be used?will the door then close? - I am also looking at the new Wolf toaster oven to compare the two;any info is welcomed

Nice oven but if you're thinking about the same oven I viewed $550 is a bit high. Nice that a temp probe is built in but hopefully you can calibrate it. If not it will not be accurate. The probe I use I calibrate by boiling some water and testing it, it should read 212 degrees (at near sea level don't know where you live). So if it reads higher or lower I can turn set the thermometer lower or higher. Just something to consider.
