Yes absolutely. If you are new to the Yakuza series you should start with Yakuza 0, and then Yakuza Kiwami, and then Yakuza Kiwami 2 before playing the games in this collection(Yakuza 3, 4 & 5) and then pick up Yakuza 6. If by that point you need more Kamurocho goodness pick up Judgment on the PS4.

What is the difference between the day one edition and the standard edition?

The Day One edition is the 2 discs containing Yakuza 3 & 4 along with Yakuza 5 in a digipack along with the Yakuza 5 PS3 case. The standard edition is just the two discs inside a standard PS4 case and nothing more.

will these remasters be as good as the Kiwami games ?? Or was more work put into the kiwami games.?

Yakuza 3 remastered has released and gameplays are on youtube which you can consult. you can expect the 1080p 60fps version to be as good(or nearly as good) as Yakuza 0 or Kiwami graphic wise. It is a must buy for yakuza fans.

It only includes one PS3 case to complete the collection on your shelf - the other discs are housed in the digi-pack. You are correct that this is great value!
