Do the perches fold up in front of nesting boxes so the chickens can't get in at night?

If you want them too yes. They fold up to access the egg collection area an will stay up. I have stubborn hens that will still go in though.

Can these be assembled so the eggs roll out to the back to be accessible from a door on the outside of the coop?

I have the two hole version, and we were able to make it work with some minor changes.

What type of nesting pads work best in the 8 hole rollout nest box?

I haven't had much luck yet with this. it appears that you don't put anything in the next in order for the egg to roll into the catch basket. I am getting ceramic eggs to see if that entices them to use the boxes. Right now they all lay next to the box in a corner. I may add some nest material and give up the egg catch.
