Q: Why do your boxes of demi glace contain fish stock instead?

Q: Can this be frozen? If so, how long and does it require thawing before using?

I used to buy these small containers in box lots and keep them on the shelf in my pantry. I have used ones that have been on the shelf more than a year with no problems. I have switched to the one pound tubs (available here). I keep them in the fridge and the ones I have in there now have been there at least a year and they still work well. I have never frozen these but I used to make my own (a batch took three days to make) and successfully froze that so I see no reason why you couldn't do these. The truth is I wouldn't bother to take up freezer space. The bigger containers are more economical and they stay a long time in the fridge.

Q: Your description states gluten free products but ingredients on the packaging say wheat flour. Please explain

Hello. We are trying to get that updated. We have 3 products showing incorrectly on Amazon as gluten -free on some of the screens. The 3 products that are not gluten-free are our French Demi-Glace, Veal Demi-Glace and Turkey Demi-Glace. The rest or our products are gluten-free. We are continuing to try to update the screens.

It's a smaller amount in individual containers. I prefer it. The size is great when cooking ground meat.
