Authentic Paella Pan...But One Must Have Reasonable Expectations...
I received this 13 3/8-inch paella pan with Amazon Prime. It arrived in perfect condition, and exactly as described. No scratches or marring of the finish. Packaging was simple and sufficient.As with all carbon steel cookware (i.e. paella pans, woks, fry pans), I wash and scrub with hot water and soap. This removes any manufacturing coating or sealant. I use a steel wool brillo pad. It does not take much scrubbing to remove any residue. After washing, I thoroughly dry the pan. I then seasoning the pan. See SEASONING METHOD at end, if interested.When I made the paella, I made a few observations. Pan heated up really well. Frying the meat and greens performed as expected. Once I added the tomatoes to make the sofrito, I immediately noticed it removed some of the seasoning. This did not surprise me at all. Tomatoes and any other foods/ingredients with acid will tend to do this on pans...initially. As you cook more and more with them, and season them more and more...the layers of seasoning will become thicker and you can eventually cook with more acidic foods...like tomatoes.Paella turned out okay, I suppose. I need to practice more, getting the right balance of flavors as to my liking. But in terms of the paella pan, I am very satisfied with it. There are alot of people who are turned off with carbon steel cookware. It requires much more maintenance and care, compared to stainless steel. This is true. But this is also the nature of carbon steel, as well as cast iron. In my opinion, this pan is great for the price. However, I may just try a stainless steel paella pan from www.paellapans.com. I love the fact that it is basically maintenance-free.***SEASONING METHOD***I then used this seasoning method (which I learned from The Culinary Fanatic on YouTube). His method produces a beautiful patina and seasoning...mainly for cast iron, but can also be applied to carbon steel. First, preheat oven to 200°F. Once preheated, place pan upside down in oven. Set timer for 15 minutes. This first step heats the pan to accept the first seasoning. After 15 minutes, take pan out of oven. Preheat oven to 300°F. Using a folded paper towel or a clean dry rag, apply a liberal amount of Crisco shortening, both inside and outside. I make sure every piece of bare metal is coated. Once every surface is coated, take another paper towel or a clean towel and wipe off ALL the Crisco shortening applied. Yes, it may seem counter-intuitive, but it is not. There will be a fine, thin layer of seasoning. Again, place plan upside down in oven. Set timer for 15 minutes. After 15 minutes, take pan out of oven. Preheat oven to 400°F. With another paper towel or a dry clean towel, wipe off any pooling of Crisco...inside and outside of the pan. Place pan upside down in oven. Set timer for 2 hours. After two hours, turn off oven and let pan cool in oven. This is the first seasoning. It is recommended to apply 3 separate seasonings.

Should include Before Use Cleaning Instructions
Ok, I bought this pan but was taken aback at the apparent easy removal of the rust coating. With pan's coating so easy to come off, I was concerned that this was a hazard, and I was ready to return it. However, I did a bit of research, and I found this the following on [...] "Before the first use, you'll need to wash it well to remove the manufacturer's special anti-rust coating. You can do this with hot soapy water. "It would really help if the manufacture included Before Use Cleaning instructions.

So glad I purchased this
Had four couples for Pinot and Paella. Ordered the 15 1/2” as needed something large, but not too big to fit on my Weber grill or in my 30” oven. This was perfect. I seasoned the pan before hand (following an Internet tutorial). I did all the cooking on the grill and it came out perfect. Some reviewers said their handle grips melted, but that did not happen to me. The pan held its shape on the high heat, not warping as some cheaper pans do. Another guest made a paella also to share, but used a large fry pan with poorer results. We all agreed the pan does make a difference. Plus...it just looks cool when serving.We are already planning our next paella party.

For the trash
I have had this pan for only a couple of days and it is a mess. Discolored as if it is old and needs to be replaced. Also sticks even when oiled generously. To bad Amazon only accepts original condition returns. What ever happened to satisfaction guaranteed? What does one do when they are totally dissatisfied ?

Nice product, but a little too small for me
Nothing wrong with it, but it's a little small to make paella for the family - for three of us, we didn't have much leftovers. I should have bought the next size up. P.S. don't listen to the people complaining about it rusting. It needs to be seasoned and then it is fine. Very easy to clean once seasoned.

really nice pan
This pan is pretty good. We are very pleased. The only surprise I found was how quickly it heated up, but you can quickly adapt. Also, it shows how efficient is the design. By the way, it does more than paella.

The rice crisped at the bottom pretty evenly, I did finish in the oven just ...
I did a lot of research on whether I could use a paella pan on my induction stove top. Eventually, I stopped stressing and bought this one. It worked really well! The rice crisped at the bottom pretty evenly, I did finish in the oven just to make sure there was crispy rice without having to dig through it. It came out close to perfect!

Awesome for my paellas
Awesome for my paellas. They rust a little bit, I put some oil on it before storing it. Also, if you put it in the oven the paint in the handlers melts, I wrap it up with aluminum foil. Satisfied overall. It's thick and the perfect size for around 10. :)

Item came to me with clear signs of repair work and the remains of a removed sticker. It was second hand and this wasn't stated on the item listing.
