Is it possible to take out the water bladder and just use the backpack?

Yes. The bladder is removable and you could then use it as a small backpack.

My hose keeps getting a kink in it when I drink. How do I avoid this?

are you saying that the tube itself has a crease in it like it was folded and then pinched? Can you tell if the hose is damaged in some way (funny colors or marks)? If so I would guess that it needs replaced and that would probably require a conversation with the company directly. Otherwise you would have to insert a second tube into where the damage is to reinforce it, and I would assume that it would start to degrade and start to leak at that point. Good luck
