Q: biscuit cutter should not be twisted during cutting, are these thin enough gauge or sharp enough to cut through dough without squashing the dough?

Yes. They were recommended to me by another user and they cut through the dough with out twisting.

Q: Per the description, do these cut perfect circles (i.e. do they really leave no evidence of a seam)? Got burned by another brand w the same claim. :(

Well I'm an electrical engineer and will have to let you know the very bad news. There is nothing man made on earth that is perfectly round, period. We can get very close to perfection but never, ever will we ever achieve it. Having said that, I have a set of these cutters and have had the chance to use them many times. They have never let me down. The micro-weld seal is almost invisible and I have never seen any marks on my dough's from a weld seam. The roundness is perfect for any baking that I want to do. I chose this vendor, Ultra Cuisine, because I had outstanding results with some of the other things they offer. One of these are the half and quarter sheet cooling racks. Those are incredible and built to last. Hope this helps.

The cutters are an inch and a quarter deep.

Q: What are the measurements on the larger cutters?

I measured my own set. The set I bought for a gift is wrapped. I believe the set graduates from 3/4" as smallest up to 4 1/2" as the biggest. No respectable kitchen should be without a set of these cutters. Keep them clean and dry and always return to the can so you always have a full set. I've been using mine for over 40 years.
