Essential reading for the sushi lover.
This, and Edo Sushi by Shimizu, are essential reads if you really want to get a handle on what sushi is really about. As a beginner, you’ll need a good introduction to preparing sushi, but the idea of ‘preparing' sushi in such books is: get fresh fish, stick on(in)rice and voila! There’s so much more. I’m still browsing through these two books, learning when/how to cure the fish. Searing skin or flesh. Aging the fish for a day or more. Trying to extract flavor from bland fish. Enhancing flavors. It’s real fun, and the results are incredible. I’ve gain even more respect for those top sushi places I like to frequent. (And the reason I spent years, not, preparing sushi at home)

Great book for intermediate and advanced sushi lovers
Unless you are paying $100+ for your sushi meals, eating at a counter with a real Japanese chef, and the fish is flown in from Japan, it is unlikely you will find value in this book, as many of the fish covered in this book simply won't be available at your standard sushi restaurant. If you are lucky enough to dine at high end sushi restaurants, then this is a great book. Each page is dedicated to a fish, and the chapters are organized by seasons. So if it is summer time, you can read up on the fish that are in season during the summer time and enjoy your next visit to the (expensive) sushi restaurants a little more, with a little more knowledge.

Picture Book for Adults
They said you shouldn't judge a book by its cover , and I didn't. When I received the book, ALL the pages was just pictures of different sushi. There was very little description -to no words about the sushi, even then the writing is All in Japanese. The printing of the book is elegant, too bad it is just a picture book. So in other words buy books u can actually see the content.

Attention to detail.
I loved this book. It detailed the myriad types of nigiri sushi, both seasonal and standard options.

Well there’s no receipt in the book.only tell you what sushi is .i mean there are tons book about sushi.

Great resource for those who want to learn more about ...
Very comprehensive book detailing fish, shellfish, seafood etc. used in sushi. It is in Japanese and English. Great resource for those who want to learn more about different items sold at a Sushi bar.

Had the privilege to eat here, the author signed our book!
I might not be able to read this book in its entirety, but after eating at the restaurant, the author signed the book and gave us the daily menu that he writes out by hand every day as a souvenir. We also kept the origami chopstick sheaths his wife folds daily before dinner service and used it as a bookmark. Incredibly memorable, this restaurant and book were an unforgettable experience!

Very traditional season fish describe
Contain all season edoma fish detail with picture. Nice book
